Bicycles & Buffalo & Banh Xeo

We bicycled into the countryside and stumbled upon an organic farming project. I had been hankering a ride on a water buffalo and ta da, we found a home stay where an old man agreed to take us on our bikes to find a buffalo. His wife, Mrs Danny, cooked me the freshest, sizzling from the pan, best banh xeo ever, stuffed with coriander, basil and lemongrass picked from her garden. We munched whilst we watched the man who’d taken us to the water buffalo do a spot of hoeing and preparing what looked like sand.

(Strange but true. All the bicycles are called Martin, the tyres, saddle and frame all logoed with Martin.)

“Banh xeo (bahn SAY-oh) is a popular street snack in Vietnam, especially in the south. The name means sound crepe, and refers to the sound the batter makes when it hits the hot skillet. Serve with fresh herbs. The shrimp-studded crepe is rolled up in a leaf of lettuce and dipped in nuoc cham dipping sauce before it gets popped in your mouth.”
